Because all Black Olives are normally treated with lye to make it 'palatable', of course later it was washed and brined. But, the alkaline aftertaste is off-putting. I am yet to find out how shops make them okay tasting in pizzas and pasta. Before putting in food may be a bit soaking in cold water and then quick pickling with vinegar+sugar+salt might help. Have to find out.Edit: I tried what had I mentioned above- had the whole bottle drained and soaked the olive in purified water for couple of hours. Later pickled them in 'White Vinegar' solution with added salt and caster sugar to taste and have kept them refrigerated ever since in a sterilized glass bottle. The taste has improved manifolds. No lye or metallic aftertaste. To note: have put the new bottle in sunlight once or twice.

Fungus after few days of opening

The olives seems good but after opening, within few days got fungus/mold on top, even though kept in refrigerator.
